VEGETABLE CASSEROLE 
1 (10 oz.) pkg. frozen mixed vegetables
1 c. onions, chopped
1 c. sliced water chestnuts, drained
1 c. grated Cheddar cheese
3/4 c. mayonnaise
1 roll Ritz crackers, crushed
1 stick butter, melted

Combine first five ingredients. Pour into casserole dish. Mix crackers and butter together and sprinkle on top. Bake at 350 degrees for 30 to 35 minutes.
