EASY CHEESY FLOUNDER PINWHEELS 
1/2 c. fresh mushrooms, chopped
2 tbsp. mayonnaise
1 tbsp. minced onion
2 tbsp. chopped parsley
Salt, pepper to taste
3 slices American cheese
6 flounder fillets

Mix mushrooms with 1 teaspoon mayonnaise, onion, parsley, salt, pepper. Place 1/2 slice of cheese on each fish fillet. Divide mushroom mixture evenly over cheese topped fish. Roll each up jelly roll style. Spread each with remaining mayonnaise. Place seam side down in shallow baking dish which has been sprayed with Pam. Sprinkle bread crumbs over all. Bake at 425 degrees for 20 minutes or until fish is opaque and crumbs are brown. Sprinkle with paprika.
