FILLET OF FLOUNDER DIVAN 
SAUCE:

1/4 c. butter
1 c. onion, finely chopped
1/4 c. unsifted all purpose flour
1/2 tsp. salt
1/2 c. hot sauce
Dash pepper
Dash nutmeg
2 c. milk
1 egg yolk
1/2 c. grated Swiss cheese

To make sauce: in hot butter, melted in medium size heavy saucepan, saute onions, stirring, until golden, about 5 minutes. Remove from heat. Add flour, 1/2 teaspoon salt, dash pepper and the nutmeg; stir until smooth. Gradually add milk, stirring after each addition. Return to heat. Over medium heat, bring to boiling, stirring constantly; reduce heat, and simmer 3 minutes, stirring. In small bowl, beat egg yolk with fork; stir in about 1/2 cup hot sauce; mix well. Return egg yolk mixture along with 1/2 cup cheese, to rest of sauce in saucepan, stirring constantly. Cook over low heat, stirring until thickened and cheese is melted; do not boil.

2 pkgs. (1 lb. size) frozen flounder fillets, thawed
3 c. broccoli spears
2 tbsp. lemon juice
Salt and pepper
2 tbsp. grated Swiss cheese

Preheat oven to 375 degrees. Butter 2 quart shallow baking dish. Steam or cook broccoli until tender. (Do not over cook) drain. Place fillets on paper towels to drain. Cut each fillet into 4 pieces. Brush with lemon juice, sprinkle with salt and pepper. Layer broccoli in bottom of prepared dish. Arrange fish over broccoli. Spoon sauce over fish. Sprinkle with cheese. Bake 20 to 25 minutes, or until fish flakes easily. Place under broiler, 6 inches from heat, until cheese is browned. Yields 6 servings.
