WESTERN MEAL IN ONE 
1 lb. ground beef
1 tbsp. vegetable oil
1 clove garlic
1/2 c. chopped onion
1/2 c. chopped green pepper
1 tsp. salt
1 tsp. chili powder
1 can (16 oz.) red beans, drained
2 1/2 c. tomatoes with juice, chopped
3/4 c. uncooked rice
3/4 c. grated cheddar cheese
1/4 c. sliced black olives

Brown beef in vegetable oil with garlic. Add the onion and green pepper; cook until onion is transparent. Drain off fat. In a 2 quart casserole, combine the meat mixture, salt, chili powder, beans, tomatoes and rice. Bake, covered, at 350 degrees for 30 minutes. Uncover and sprinkle with cheese and olives; bake for 15 minutes more. Yield: 6 to 8 servings.
