MEXICAN MACARONI CON QUESO 
8 oz. pkg. macaroni (or other similar pasta)
4 tbsp. butter
1/4 onion, chopped
1/4 bell pepper, chopped
1 clove garlic, minced
2 1/4 c. combined grated cheddar & Monterey Jack cheese
1 c. milk
1/4 canned jalapeno, seeded & minced
Salt & pepper to taste
1 c. coarsely crushed tortilla chips

Preheat oven to 325 degrees. Cook macaroni according to package directions until al dente; drain.

Meanwhile, melt 1 tablespoon butter in a saucepan and saute onion, bell pepper and garlic until just wilted.

Add remaining butter and pasta; toss to combine. Add 2 cups cheese, milk and jalapeno. Salt and pepper to taste.

Transfer mixture to an oiled 1 1/2 quart casserole. Bake 30 minutes or until set.

Sprinkle with crushed tortilla chips and remaining cheese. Bake 10 minutes more. Makes 6 servings.
