MICROWAVE PEANUT BRITTLE 
1/2 c. firmly packed light brown sugar
1/2 c. granulated sugar
1/2 c. light corn syrup
1 c. unsalted peanuts
2 tbsp. unsalted butter
1/4 tsp. salt
3/4 tsp. baking soda
1/2 tsp. vanilla

Spray cookie sheet and icing spatula with non-stick vegetable oil cooking spray. Combine sugars and corn syrup in microwave safe 2 quart casserole. Microwave uncovered on high for 4 minutes; sugars will begin to dissolve. Stir in peanuts, butter and salt until blended. Microwave, uncovered on high for 5 1/2 to 6 minutes. Quickly stir in baking soda and vanilla. Pour onto prepared sheet, spreading with spatula. Cool until firm. Break into small pieces. Store in air tight container for up to 2 weeks.

Since microwave ovens vary in power, you may need to adjust your cooking time.
