PEACH SHORTCAKE 
2 c. flour
1/2 tsp. salt
4 tsp. baking powder
1 tbsp. sugar
1/3 c. shortening
1 well beaten egg
1/2 c. milk

Sift dry ingredients; cut in shortening. Add combined egg and milk, stirring until moistened. Turn out on slightly floured surface. Divide dough in half; pat out to fit 8" round layer cake pan. Place each half in a pan.

Bake at 450 degrees for 15 to 18 minutes. Spread sliced fresh peaches (sugared) and whipped cream between layers and over top. Serves 8.
