RICE PUDDING 
2 c. cooked rice
2 tbsp. raisins (opt.)
1 tbsp. butter
1/3 c. sugar
2 tbsp. cornstarch
Dash cinnamon
1/8 tsp. nutmeg (opt.)
1 1/2 c. light cream
1 tsp. vanilla

Mix sugar, cornstarch, cinnamon and nutmeg in a bowl. Gradually add light cream and vanilla to sugar mixture, stirring until smooth. Add butter and raisins to rice. Add sugar mixture to rice. Bake at 350 degrees for 30 minutes (until slightly thickened and creamy).
