LOW-FAT SPINACH CASSEROLE 
2 pkgs. frozen chopped spinach, cooked & drained
1 lb. low-fat cottage cheese
2 eggs, beaten
Parmesan cheese, grated

Mix all ingredients together. Pour into buttered casserole. Cover with grated Parmesan cheese. Bake for 1/2 hour at 350 degrees.
