1/2 stick butter, melted 2 eggs, beaten 1/2 c. granulated sugar 1/4 tsp. salt 1 tsp. cinnamon 1 lg. can yams, drained (save juice) TOPPING: 1/2 stick butter 2 tbsp. flour 3/4 c. brown sugar 1 c. chopped walnuts or pecans Slice yams. Place in 9x9 inch baking dish with half of drained juice. Mix butter, beaten eggs, salt, sugar and cinnamon with remaining juice. Pour over yams. TOPPING: Mix 1/2 cup butter, melted, with brown sugar, flour and nuts. Sprinkle over yams. Bake at 350 degrees approximately 35-40 minutes uncovered. Cover last 10 minutes if yams start to brown. Serves 8. |
