CARROT CAKE 
3 eggs
2 c. sugar
1 c. vegetable oil
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
2 c. flour
2 c. shredded carrots
1 c. walnuts
1 c. drained crushed pineapple

Grease and flour a large pan. Mix eggs, sugar, oil together. Sift salt, soda, cinnamon, and flour together and stir in carrots, nuts pineapple and mix well. Bake at 350 degrees for 1 hour or until cake tests done.

TOPPING MIX:

1/3 c. soft butter
2/3 c. brown sugar
1/4 c. canned milk
1 c. moist shredded coconut

Spread over top of warm cake. Place low under broiler until mixture browns. (A few minutes.)
