SHRIMP FRIED RICE 
1/2 lb. bacon
2 lg. chopped onions
2 lg. chopped bell peppers
2 c. converted rice
2 1/2 c. hot water
1/2 tsp. soy sauce
1 lb. sm. shrimp
Season salt to taste
Red pepper to taste

Cut bacon into small strips, fry until crisp. Add vegetables, saute until tender. Add rice and stir. Add hot water, soy sauce, shrimp and seasonings. Bring to boil and boil 1 minute, stir once, cover tightly, reduce heat and simmer 20 minutes. Remove from heat and let stand until all liquid is absorbed (approximately 5 minutes). For softer rice use more water and simmer longer. For firmer rice, useless water and simmer for a shorter time.
