IRISH FRECKLE BREAD 
5 1/2 c. flour
1/2 c. sugar
2 pkgs. yeast
3/4 tsp. salt
1 c. boiling water
1/2 c. butter, melted
1/3 c. cooked mashed potatoes, cooked
1 c. chopped dates
2 eggs

Add 2 cups flour, 1/2 cup sugar, undissolved yeast and salt. Stir in water and butter; form soft dough. Add 2 eggs, potatoes, dates. Add the rest of the flour. Knead dough 8-10 minutes. Cover and let rest 10 minutes.

Cut into 4 pieces. Set 2 pieces side by side in greased loaf pan. Then rest for 1 hour. (Repeat with remaining 2 pieces.) Bake at 350 degrees for 35 minutes.
