CARAMEL PIE 
2/3 c. sugar
2 tbsp. cornstarch
2 c. evaporated milk
1 baked pie shell
1/8 tsp. salt
1/3 c. water
3 eggs, separated

Combine water, sugar and salt and cook down (in iron skillet) until golden brown. Add 1 1/2 cup milk, cook and stir until sugar is dissolved. Combine remaining 1/2 cup milk, cornstarch and egg yolks and beat well. Add to hot mixture. Cook and stir 3 or 4 minutes. Pour into baked pie shell and top with meringue made with egg whites.
