“SOUTHERN RICE CASSEROLE” IS IN:

SOUTHERN RICE CASSEROLE 
1 (10 1/2 oz) can beef consomme, undiluted
1 (10 1/2 oz) can French onion soup, undiluted
2 tbsp. butter, melted
2 cups uncooked long-grain rice

Combine consomme, onion soup, 2 tablespoons butter, and rice in a lightly greased 10x6x2-inch baking dish. Cover and bake at 350°F for 45 minutes or till all liquid is absorbed.

Topping:

1/2 cup chopped onion
1/2 cup golden raisins
1/2 cup chopped cashews
1 tbsp. butter, melted

Sauté onion, raisins, and cashews in 1 tablespoon butter till onion is tender. Sprinkle over cooked rice.

Makes 6-8 servings.
