ZUCCHINI CASSEROLE 
4 c. sliced zucchini/broccoli
2 c. boiling water
2 eggs
1 c. mayonnaise
1 onion, chopped
1/4 c. chopped green pepper
1 c. grated Parmesan cheese
Salt and pepper to taste
1 tbsp. butter
2 tbsp. buttered bread crumbs (optional)

Cook zucchini in water until just tender, drain.

In large bowl beat eggs. Stir in mayonnaise, onion, green pepper, cheese, salt and pepper. Add zucchini.

Put into greased 1 1/2 quart baking dish. Dot with butter and sprinkle with bread crumbs. Bake at 350 degrees for 45 minutes or until bubbly.
