UPSIDE DOWN APPLE CAKE 
1 c. sifted flour
1 1/2 tsp. baking powder
Pinch salt
3 med. apples
1 tsp. lemon juice
1/2 c. brown sugar
1/2 tsp. cinnamon
2 eggs (separated)
2/3 c. sugar
1/3 c. hot water
2 tsp. vanilla

Bake 350 degrees 35 minutes or until done.

Sift flour, baking powder and salt together; set aside.

Arrange and slice and pare apples in an 8 inch pan (non-stick). Sprinkle with lemon juice, cinnamon and 1 teaspoon of brown sugar.

Beat egg yolks, brown sugar and sugar. Add to water and vanilla and beat. Blend well. Add flour mix to egg yolk mix.

Beat egg whites until stiff; fold into batter. Pour batter over apples. Bake as above. Invert cake and serve warm.
