APPLE UPSIDE - DOWN CAKE 
2 c. apples, chopped
1 heaping tsp. cinnamon
1/2 c. raisins
1/2 c. nuts, chopped
1 egg or egg replacer
2 tbsp. butter
2 tbsp. apple juice concentrate
2 tbsp. maple syrup
1/2 c. milk
1 tsp. (low-sodium) baking powder
1 1/4 c. unbleached wheat (or other grain) pastry flour

Preheat oven to 350 degrees. Mix the chopped apples, raisins, nuts, and cinnamon together and place in the bottom of an oiled 8-inch square pan. Melt the butter and combine with the other wet ingredients. Sift the flour and baking powder together. Add the wet ingredients and mix well; pour over the apple mixture. Bake for 30 minutes. Cool slightly and flip over onto a plate, apple side up. Pour warm apple sauce on top or warm caramel.
