DURGIN'S BOSTON BAKED BEANS | |
2 lb. yellow eye beans or kidney beans (dry) 1 lb. lean salt pork 1 med. onion (peeled, whole) 8 tbsp. sugar 2/3 c. molasses 2 tsp. dry mustard 1 tsp. salt (not needed) 1/4 tsp. pepper hot water Soak beans overnight after washing them. Check for pebbles. In the morning, parboil them for 10 minutes with a teaspoon baking soda. Then run cold water over the beans in a colander or strainer. Score rind of salt pork in inch squares cut in half. Put half on bottom of a 2 quart bean pot, with the whole onion. Put beans in pot. Put the rest of pork on top. Mix other ingredients with hot water. Pour over beans. Put in 300 degree oven for 6 hours. Add water as needed to keep beans moist but don't flood them. Makes 10 portions for main dish. |
