TAWNYA'S EASY CHEESY POTATO SOUP 
Try it before you judge it! Super easy and absolutely delicious. Great with French or some other crusty bread.

8 to 10 medium potatoes (peeled and cubed (1 to 1 1/2-inch))
1/2 lb. bacon, cut into small pieces (1/2-inch) (about 8 slices)
1 yellow onion, chopped
1 cup milk
2/3 lb. Velveeta cheese, cubed (1/3 block)
salt and pepper, to taste

Put potatoes into large pot and fill with just enough water to cover them. Cover with lid and bring to boil. Lower heat to medium-high, just enough to maintain slow boil. Cook for about 20 minutes.

While boiling, mix onion and bacon in large skillet and fry over medium heat until onions turn golden brown - bacon will look undercooked/flimsy - this is OK! When potatoes are done, do NOT drain!

Add milk, onions, bacon and cubed Velveeta to potatoes and water. Heat over medium-low, stirring so soup doesn't scorch, until all the cheese has melted. Salt and pepper to taste. MMM!
