SALMON PATTIES 
1 (1 lb.) can salmon
1/2 c. dry bread or cracker crumbs
3/4 tsp. salt
Dash of pepper
2 eggs
3 tbsp. mayonnaise or salad dressing
3 tbsp. butter, butter or shortening

Drain salmon. Discard bones and dark skin. Fork into flakes. Now mix salmon with crumbs, salt and pepper. Beat the eggs slightly. Add to mixture with mayonnaise or salad dressing. Shape into 6 to 8 large patties or approximately 20 small patties. Fry in Mazola oil, etc. until brown on both sides.

Note: For flavor variations, add 2 tablespoons prepared horseradish or 2 stalks finely chopped celery to patties before frying.
