BARBECUE SAUCE | |
2 medium onions, chopped 1/2 cup chopped celery 1 cup ketchup (Hunts) 1 cup water 1/4 cup lemon juice 2 tbsp. brown sugar 2 tbsp. Worcestershire sauce 2 tbsp. vinegar 1/4 cup vegetable oil Cook onion and celery in oil until tender, but not brown; add remaining ingredients; season; simmer 10 minutes. This makes a delicious sauce for various dishes. I started using it for barbecue chicken and found that it was great for pork chops and beef ribs and for barbecuing on the grill in summer. CHICKEN: Place chicken in baking dish; pour sauce over. Bake, uncovered at 325°F for 1 1/4 hours. Sauce will thicken as it cooks. PORK CHOPS: Trim fat from chops. Place in baking dish, pour sauce over, bake for 1 to 1 1/4 hours. BEEF RIBS: (The men in our family love this!) Buy very lean ribs. To hasten cooking place ribs in pressure cooker and cook for 30 minutes at 10 pounds pressure. Remove from cooker, place in baking dish, pour sauce over, bake about 30 minutes at 325°F. |
