JOANNE'S BURGERS 
30 lb. ground beef
3 c. Worcestershire sauce
1 c. liquid smoke
4 tbsp. salt
3 tbsp. pepper
2 tbsp. red cayenne pepper
2 c. finely chopped onions
7 1/2 lb. Thousand Island salad dressing (or 1 oz. per serving)
3 tbsp. white pepper
120 hamburger buns
5 lb. lettuce
24 sliced tomatoes
1 qt. dill pickle chips

Mix all ingredients together in mixer. Do not over mix. Shape patties about 4 oz each. Grill 2 1/2 minutes each side or until done. Put butter on both sides of bun and grill bun on both sides. Garnish with lettuce, 2 slices of tomato and 2 pickle chips. Serve with 1 oz. of Thousand Island dressing.

If you make them too thick, it will take too long to cook. Cheese is optional. A very moist delicious burger. This recipe serves a large crowd. 120 servings.
