TWICE BAKED POTATOES 
4 med. potatoes
2 tbsp. butter
1/2 c. milk
1/4 tsp. salt
Dash of pepper
1/2 c. shredded process American cheese

1. Prick potatoes, place in oven. Microwave for 10-12 minutes on high until tender.

2. Carefully scoop cooked potato out of shells and place in medium mixing bowl. Add butter, milk and seasoning, mash until lump free. Fill potato shells, top with cheese and place in microwave dish in oven. Continue cooking for about 4-5 minutes on roast. Let stand 5 minutes before serving.

Tip: Prepare stuffing potatoes ahead of meal. Refrigerate. Microwave on roast 6-8 minutes, during final cooking period in basic recipe.

Since microwave ovens vary in power, you may need to adjust your cooking time.
