TWICE BAKED SWEET POTATOES 
3 sm. to med. sweet potatoes
1/3 c. plain non fat yogurt
1 tbsp. skim milk
1/8 tsp. parsley
1/8 tsp. curry

Bake potatoes at 400 degrees for 1 hour or until tender. Cut potatoes lengthwise and carefully scoop out potato. Combine sweet potato, yogurt, milk, parsley and curry in a bowl until fluffy. Stuff potato shells with mixture and place on baking sheet. Bake at 350 degrees until through about 15 to 20 minutes. Serves 6.
