BEEF BRISKET BARBECUE 
2 1/2 lb. well trimmed fresh brisket (first cut)
1 1/2 tsp. salt
1 med. onion, chopped (1/2 cup)
1/2 c. catsup
1/4 c. vinegar
1 tbsp. Worcestershire sauce
1 1/2 tsp. pepper
1 bay leaf crumbled or (1/2 tsp. basil leaves)
1/2 tsp. liquid smoke

Sprinkle beef with salt. Place in pan (or cooking bag). Mix remaining ingredients. Pour over beef, cover and cook at 325 degrees for 2 1/2 to 3 hours. Cool and slice thin cross grain, strain broth or drippings and if tart add 1/2 teaspoon sugar and pour over meat. Can be made a day ahead. Warm in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
