BAKED RICE PUDDING 
Combine 2/3 cup Minute rice, 2 3/4 cups whole milk, 1/3 cup sugar, 1/2 teaspoon salt and 1/3 cup raisins in 3-quart saucepan. Bring to boil, stirring frequently. Reduce heat; simmer 10 minutes, stirring occasionally.

Mix 2 slightly beaten eggs and 1 teaspoon vanilla in bowl. Slowly stir in rice mixture; mix well. Pour in 1-quart casserole. Sprinkle nutmeg on top. Place in pan of hot water. Bake at 375 degrees for 20 to 30 minutes, or until center is set. Serves 6 to 8.

Double for 2-quart casserole. Bake 40 to 45 minutes.
