NEW ORLEANS PRALINES 
2 c. sugar
3/4 tsp. baking soda
1 c. light cream
1 1/2 tbsp. butter
2 c. pecan halves

In a 3-quart saucepan combine sugar and soda; mix well. Stir in cream; bring to boiling over medium heat, stirring constantly. Cook and stir to soft ball stage. Remove from heat; add butter. Stir in pecans. Beat the candy until thick enough to drop from spoon (2-3 minutes).

Drop tablespoons of candy onto waxed paper. If candy becomes too stiff, add a little hot water.
