GNOCCHI OR CAVATELLI 
500 grams durum wheat or semolina flour
250 grams lukewarm water

Mix flour and water. Knead.

Cover with plastic wrap or place under an overturned bowl. Let rest 15-20 minutes. Knead again until smooth.

Cover dough. Pinch off a small egg sized piece and roll it into a log shape 1 cm. diameter.

Insert the stick into a cavatelli/gnocchi machine and turn the crank.

If you have no machine, slice the log into small pieces and roll them into the tines of a fork with your thumb to form a closed curled up pasta piece with ridges.

Boil in salted water for 7-10 minutes, or til tender but slightly al denté.
