GNOCCHI OR CAVATELLI | |
500 grams durum wheat or semolina flour 250 grams lukewarm water Mix flour and water. Knead. Cover with plastic wrap or place under an overturned bowl. Let rest 15-20 minutes. Knead again until smooth. Cover dough. Pinch off a small egg sized piece and roll it into a log shape 1 cm. diameter. Insert the stick into a cavatelli/gnocchi machine and turn the crank. If you have no machine, slice the log into small pieces and roll them into the tines of a fork with your thumb to form a closed curled up pasta piece with ridges. Boil in salted water for 7-10 minutes, or til tender but slightly al denté. |
