LINDSAY'S CHICKEN AND GNOCCHI
STEW
 
This is a fantastic stew that my husband makes. It's simple and delicious!

1 (24 oz.) can chicken broth
2 cups water
1 small onion
3 celery stems
2 cups diced carrots
6 red potatoes
2-3 large chicken breasts
1 pkg. potato gnocchi
salt & pepper, to taste

Dice all vegetables and place in pot with chicken broth. Add about 2 cups of water, cover and let stew for 30 minutes.

In a separate pot or pan, prepare chicken. You can pan sear, bake or boil the chicken, but boiling tends to breed the best result.

Cook gnocchi according to package directions.

Once chicken is fully cooked, cut into cubes or shred. Add chicken and cooked gnocchi to simmering broth with veggies and let stew for approximately another 15 minutes.

Though it will dirty a few dishes, this stew is filling and very hearty. Your family will love it!!
