ALBACOVE STIR FRY 
2 tbsp. oil
1/2 c. chopped onion
1 lg. clove garlic, minced
4 c. thinly sliced assorted vegetables (carrots, pea pods, broccoli, peppers,
etc.)
2 cans tuna, drained (I use one can)
3 tbsp. soy sauce
1 tsp. sugar
1 tbsp. lemon juice

Heat oil, fry onion, garlic and vegetables until crisp and tender. Add tuna, soy sauce, sugar, lemon juice and one tablespoon water fry 1 minutes. Serve over hot rice.
