NEW ENGLAND SHORTBREAD COOKIE | |
1 c. butter, 2 sticks 1/2 c. sugar 1 tsp. vanilla extract 2 c. all purpose flour 1 (3 1/2 oz.) can coconut 1/2 c. slivered almonds (or finely chopped pecans) Confectioners sugar Combine in the order given. Form into rolls the size of half dollars. Wrap in waxed paper or foil and chill. Slice and bake in a 300 degree oven for 25 minutes until golden brown. Sprinkle with confectioners sugar. Makes 2 dozen cookies. |
