SHORTBREAD COOKIES 
3/4 c. sugar
1 1/2 c. butter, softened
1 tsp. vanilla
4 c. flour
Cinnamon & sugar

Cream butter and sugar. Add vanilla. Add flour, one cup at a time and mix well. Press dough into a 9"x15" jelly roll pan. Sprinkle lightly with sugar and cinnamon. Bake at 325 degrees for 30 minutes or until just beginning to turn golden. Cut into squares while still warm, but do not remove from pan until cool.

Delicious, but I didn't think to use colored sugar to make them look more appropriate for the holidays. I used turbinado and the cinnamon made them look messy. Next time I might use thin white icing piped in a few skinny stripes.
