ZUCCHINI CASSEROLE 
4 eggs
1 c. Bisquick
1/3 c. buttermilk
2 tbsp. oil
3 c. thinly sliced zucchini
3 green onions, chopped and sauteed in butter
1/2 c. grated American cheese
1/2 tsp. salt
1/2 tsp. black pepper

Preheat oven to 350 degrees. Beat eggs then add Bisquick and oil; mix well. Stir in all remaining ingredients. Pour into 9 x 13 inch glass dish and bake 25 minutes.
