TURKEY CHOW MEIN 
3 c. leftover turkey
4 tbsp. oil
4 c. shredded celery
1 c. sliced onion
2 c. meat stock
2 tbsp. cornstarch
4 tbsp. soy sauce
Salt and pepper
1 pkg. med. noodles

Cook 1 package medium noodles in boiling water for 5 minutes. Drain and dip in cool water. Dry on towel. Fry to delicate brown. Drain on unglazed paper. Fry turkey in oil until browned. Add celery, onions and meat stock. Cook until vegetables are tender. Mix cornstarch and soy sauce and add. Bring to a boil. Season to taste. Serve on a bed of hot fried noodles.
