BANANA CARROT BREAD | |
1 c. mashed bananas, 2-3 bananas 1 c. sugar 3/4 c. salad oil 2 eggs 2 c. sifted all purpose flour 1 tsp. vanilla 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1 c. finely grated raw carrot 1/2 c. chopped pecans Combine banana, sugar, oil, and eggs in large bowl. Beat with an electric mixer for 2 minutes or 300 strokes by hand. Sift together flour, soda, salt, and cinnamon. Fold into banana mixture. Stir in carrots, nuts, and vanilla. Spoon into a greased and floured 9 x 5 x 2 3/4 inch loaf pan. Bake at 350 degrees for 55-60 minutes or until it tests done. Cool in pan 10 minutes. Remove from pan and cool on rack. Wrap and store overnight before cutting. Makes 1 loaf or 10 servings. |
