APPLE - CARROT QUICK BREAD 
1 1/2 c. peeled, shredded apples (2 med.)
1/2 c. shredded carrot (1 med.)
1/4 c. butter
1/2 tsp. lemon extract, if desired
2 eggs
1 3/4 c. flour
2/3 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. coconut or chopped nuts

Heat oven to 350 degrees. Grease bottom only of 9 x 5 inch or 8 x 4 inch loaf pan. In large mixer bowl, blend first 5 ingredients. Lightly spoon flour into measuring cup; level off. Add remaining ingredients, except coconut or nuts. Beat 3 minutes at medium speed. Stir in coconut or nuts.

Pour batter into prepared pan. Bake 50-60 minutes or until toothpick inserted in center comes out clean. Remove from pan to cool. Refrigerate any leftovers. Makes 1 loaf.
