MOM'S CARROT CAKE | |
3 c. unsifted flour 2 tsp. baking soda 1 tsp. ground cinnamon 1 tsp. ground ginger 1/2 tsp. salt 3 eggs 1 1/2 c. sugar 3/4 c. real mayonnaise 1 (20 oz.) can crushed pineapple, drained (reserve 1/2 c. juice) 3 c. coarsely shredded carrots 1 c. raisins 1 c. chopped walnuts Lemon frosting or sour cream frosting Grease and flour 9x13 baking pan or 6 small loaf pans, or 2 medium loaf pans. Mix flour, spices and salt. Beat the eggs, sugar, mayonnaise, pineapple and 1/2 cup pineapple juice in a large bowl on medium speed with a mixer until well blended. Add flour mixture gradually. Stir in remaining ingredients. Bake at 350 degrees for 50 to 55 minutes. Cool and frost or sprinkle powdered sugar over top. |
