ITALIAN HOME MADE BREAD 
5 lb. plain flour
3 tsp. sugar
Yeast - block yeast use 1 1/4 blocks (3 1/2 oz.) or granule yeast 3 pkts.
5 tbsp. shortening
2 tbsp. salt

Mix all dry ingredients, then add shortening, then yeast dissolved in a bowl of warm water, then add more warm water until dough forms a hard ball, do not get it too sticky - harder than biscuit dough. Then knead until smooth, if sticky add flour or oil around pan, knead more. Then cover with light cover and keep in warm place and let rise for 35 minutes, knead again, then let rise again for 45 minutes or more.

Make loaves in loaf pans or buns, cover and put in warm place. Let rise for 45 minutes to 1 hour. Then bake in 375 degree oven until good and brown (45 minutes to 1 hour).
