ORANGE COCONUT MUFFINS 
2 c. flour
4 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
2 eggs, well beaten
1 c. milk
2 tbsp. grated orange rind
4 tbsp. melted butter
1/2 c. shredded coconut

Sift together all dry ingredients. Mix eggs and milk. Add liquids to powders, stir until moistened. Stir in the orange peeling, melted butter and coconut. Fill greased muffin tin two-thirds full. Bake at 425 degrees for 20 to 25 minutes.
