CHICKEN PARMESAN 
1 lb. boneless, skinless chicken breasts
1/4 c. each chopped celery, onion and parsley
1 tbsp. minced garlic
1/2 c. freshly grated Parmesan cheese

Chop chicken in food processor until it is the consistency of hamburger. Stir in celery, onion, parsley, garlic and cheese. Form into 4 rounded patties.

Meanwhile, unfold puff pastry dough and cut into 4 equal rectangles. Roll out each rectangle slightly. Place one chicken patty in the middle of each rectangle and fold pastry over patty in envelope fashion. Pinch edges closed. Place on baking sheet.

Optional: You can use some of the extra puff pastry dough to cut out small shapes with a canape cutter to decorate each portion before baking. If you do this, moisten the back of your decorations with egg yolk so that they will stick.

Bake at 375 degrees for 30 minutes or until pastry is golden brown. Serves 4.
