SHRIMP CREOLE | |
1 med. green pepper, diced 1 med. onion, sliced 2 tbsp. Cajun seasoning 1/2 lb. med. shrimp, deveined 1 (4 oz.) can sliced mushrooms or fresh equivalent 2 cans of stewed tomatoes or 1 lg. can pureed tomatoes 2 tbsp. butter Melt butter in saucepan. Add Cajun seasoning to blend. Add tomatoes and vegetables; cook over low heat for 10 minutes, or until vegetables become soft. Add shrimp; stir until pink. Serve over white rice. Serves 2. |
