SIMPLE VEGETABLE SOUP | |
Low in calories. (For larger appetites serve with baked potatoes, rolls and dessert.) 1 lg. potato, diced 1 sm. onion, chopped 1/2 green pepper, diced (optional) 2 c. water 1/2 beef bouillon cube Simmer above ingredients together for 10 minutes and add: 1 pkg. (10 oz.) frozen mixed vegetables 1 can (16 oz.) unsalted stewed tomatoes 1 tbsp. oil 1 tsp. oregano leaves Bring to boil, reduce heat and cook an additional 20-30 minutes, covered. Makes 7 cups. |
