ZUCCHINI PICKLE RELISH 
12 c. zucchini (not peeled), cut in slices
4 c. onions, sliced large
1 red pepper or pimento
1 lg. green pepper
5 tbsp. salt

Don't use old vegetable because skin is too tough.

Grind red pepper or pimento with green pepper; mix all ingredients together in large bowl. Let stand overnight. Next morning, wash well and drain vegetables. Bring following to boil: 1 1/2 tsp. celery seed 1 tsp. nutmeg 5 c. sugar (granulated) 3/4 tsp. turmeric 1/2 tsp. pepper

When boiled, add all vegetables. Cook 30 minutes. Seal in sterilized pint jars and seal. Makes 6-7 pints. Worth time and effort to make. Delicious!
