SUMMER ZUCCHINI RELISH 
4 to 5 med. zucchini
1/2 c. sugar
1/4 c. honey
1/2 tsp. salt
2/3 c. vinegar
2 tbsp. vegetable oil
1 tbsp. minced onion
1/3 c. minced green sweet pepper
1/3 c. minced celery

Thinly slice zucchini; place in a large bowl. In a separate bowl, combine sugar, honey, salt, vinegar and oil; blend well. Add onion, green pepper and celery to zucchini; toss lightly to mix. Pour vinegar mixture over zucchini mixture. Cover and refrigerate at least 4 hours before serving.
