ZUCCHINI RELISH 
10 c. zucchini (grounded)
5 sm. onion
1 carrot

Put in cold water with 3 tablespoons salt overnight in ice box. Squeeze out good and let drain.

2 1/2 c. vinegar
4 1/2 c. sugar
1 tbsp. mustard seed
1 tbsp. turmeric
2 tbsp. celery seed
1 tsp. nutmeg
1/2 tbsp. pepper

Boil 30 minutes
