OATMEAL COOKIES | |
1 c. sifted, all-purpose flour 1/2 tsp. salt 3 c. uncooked rolled oats 1 c. raisins 1 c. soft shortening 2 c. brown sugar, lightly packed 2 tsp. vanilla 2 eggs 1/3 c. Pet evaporated milk Preheat oven at 375 degrees. Sift together flour and salt onto piece of paper. Mix in oats and raisins with a spoon. Mix shortening, brown sugar, and vanilla in a 2-quart bowl until light and fluffy. Add eggs and evaporated milk and beat hard for 1 minute. Stir in flour mixture about 1/3 at a time. Drop by teaspoons onto greased cookie pan, about 2 inches apart. Bake on oven rack slightly above center 12 minutes, or until light brown. Remove from pan at once. Makes about 5 dozen cookies. |
