SOUTH-OF-THE-BORDER OVEN
BARBECUED CHICKEN
 
8 skinned boned chicken breast halves
3/4 c. barbecue sauce
1 (4.5 oz.) can chopped green chiles (undrained)
1/4 c. chopped green bell peppers (optional)
1/2 c. (2 oz.) shredded Monterey Jack cheese
1/2 c. (2 oz.) shredded Colby cheese

Preheat the oven to 375°F. Place chicken in a greased 9 x 13 baking dish. Brush chicken with barbecue sauce.

Bake, uncovered, at 375°F for 15 minutes. Sprinkle with green chiles and chopped green bell pepper.

Bake 15 minutes more or until chicken is done. Place chicken on a serving platter, reserving drippings. Stir drippings until smooth and pour over chicken. Top with cheeses. Serve immediately.

Makes 8 servings.
