SEAFOOD CASSEROLE 
1 lb. scallops
1 lb. shrimp (saute)
2 lbs. imitation crab meat
1 lb. bell pepper
Green onions
1 1/2 c. Half and Half
3/4 c. Cheddar cheese
butter
2 tbsp. plain flour
1 c. crushed Ritz crackers

Saute peppers and onions in 2 tablespoons butter until done. Remove from heat and add seafood. In a small pot melt 2 tablespoons butter. Add 2 tablespoons flour - mix until smooth. Add Half and Half, cook on medium heat - stirring constantly until thick. Add Cheddar cheese and stir until melted. Pour over seafood. Mix well. Put in buttered casserole dish. Melt 2 tablespoons butter and add 1 cup crushed Ritz crackers. Put over casserole. Bake 20 minutes at 400 degrees.
