BREAD PUDDING 
1 qt. milk
2 c. bread cubes
1/4 c. butter
4 eggs, separated
1/2 c. sugar
1/2 tsp. salt
1 tsp. vanilla
Few grains nutmeg
1 c. raisins or coconut or both may be added if desired

Scald milk; add bread cubes, butter. Beat eggs; add sugar and salt. Add milk mixture and vanilla. Add raisins or coconut. Pour into baking dish.

Beat egg whites until stiff; add sugar to taste. Top bread pudding with meringue. Bake in moderate oven 350 degrees or until inserted knife or toothpick comes out clean.
